Here's a postpartum recipe that's easy to make, nutrient-dense, and delicious:



Quinoa and Vegetable Stir Fry 
Ingredients:


  • 1 cup of quinoa

  • 2 cups of water

  • 1 tablespoon of coconut oil

  • 1 zucchini, chopped

  • 1 red bell pepper, chopped

  • 1 cup of mushrooms, sliced

  • 1 tablespoon of grated ginger

  • 2 cloves of garlic, minced

  • 2 tablespoons of tamari sauce

  • 1 tablespoon of sesame oil

  • 1/4 cup of chopped cilantro



Directions:


  1. Rinse the quinoa in a fine mesh strainer and add it to a pot with 2 cups of water. Bring to a boil, then reduce the heat to low and cover the pot. Cook for 15-20 minutes until the quinoa is fluffy and the water is absorbed.

  2. While the quinoa is cooking, heat the coconut oil in a large pan over medium-high heat.

  3. Add the zucchini, bell pepper, and mushrooms and sauté for 5-7 minutes until the vegetables are tender.

  4. Add the grated ginger and minced garlic to the pan and cook for an additional 1-2 minutes until fragrant.

  5. Add the cooked quinoa to the pan with the vegetables and stir to combine.

  6. Add tamari sauce and sesame oil to the pan and stir to coat the vegetables and quinoa.

  7. Top the stir fry with chopped cilantro and serve.


This dish is packed with protein and fiber from the quinoa, as well as vitamins and minerals from the vegetables.
